So this week at work, we had an awesome potluck. Everyone brought in their side dish, or dessert of choice, my choice was to make an awesome carrot cake. The cake has two layers, and is covered in cream cheese frosting. Sprinkled in brown sugar, decorated with crushed walnuts, and fondant carrots to top it off! I used the same recipe I used for my Thanksgiving cupcakes, and my co-workers loved it, I’m very happy with how it turned out!
